Ingredients

  • 6 large carrots ends removed and peeled
  • 1 medium granny smith apple cored and chopped
  • 1/2 cup raisins
  • 1/2 cup walnuts roughly chopped
  • 1 whole lemon juiced
  • 1 tsp ground ginger

Instructions

  1. Shred the carrots into a large bowl.

  2. Add the rest of the ingredients to the bowl, mix well. Adjust seasonings to taste.

  3. Serve chilled
