Summer Salmon Salad

Trader Joe's inspired summer salmon salad is a light and refreshing dish you can enjoy during these hot summer months!

Ingredients

  • 6 oz Bag of baby spinach
  • 1 Pack Salmon Trader Joe’s has different types depending on the season and store! About 3/4 lbs.
  • 2 tbs Green Goddess dressing Found in the refrigerated vegetable section
  • 1 whole Mango Sliced and diced
  • 1 whole Avocado Cubed
  • 5 oz Heavenly tomatoes Half of a 10oz bag or about 10 baby tomatoes sliced
  • 1 tbs Olive Oil
  • 1 tsp Salt To taste
  • 1 tsp pepper To taste
  • 1/4 Lemon Lemon juice To cover salmon

Instructions

  1. Preheat the oven to 425 degrees.

  2. Line a baking sheet with foil.

  3. Using a paper towel, pat the salmon dry and place it on the baking sheet.

  4. Drizzle olive oil over the salmon and apply a generous amount of salt and pepper.

  5. Place in the oven and roast for 4-6 minutes. Salmon in done when flakey.

  6. While the salmon roasts, toss the spinach, avocado, tomatoes, and mango in a large bowl.

  7. Take the salmon out of the oven and squeeze about a quarter of a lemon’s juice onto it.

  8. When ready to serve, divide salad into 2 bowls, top each with half of the salmon, and add salad dressing.
