Sweet potatoes are a wonderful source of fiber. They are also rich in iron and beta carotene which is great for your immune system. Sweet potatoes are full of vitamin A, C, and potassium, and have fewer calories than white potatoes.

In this recipe, black beans act as the protein. A single serving of black beans contains 8 grams. However if you’d like to add an additional source of plant based protein, Trader Joe’s sells packs of tempeh for just $2. Chop some of this up and throw it in your soup… or don’t! Further, black beans are low in fat, sodium, and cholesterol. Vegetarians, vegans, and even people who eat meat can benefit from keeping a can of these in their pantry.

V8 is 100% vegetable juice made from tomatoes, celery, carrots, beets, parsley, lettuce, watercress, and spinach. It is rich in potassium, vitamin A,C, and lycopene (the antioxidant that makes tomatoes red). Many people fall short of meeting the recommended amount of servings of vegetables per day. 8 ounces of V8 contains 2 servings of vegetables!

Sweet Potato Taco Soup

Ingredients

  • 2 sweet potatoes chopped
  • 1 onion diced
  • 1/2 bag fresh spinach
  • 1 bottle original V8 46 oz bottle
  • 1 can black beans drained
  • 1 can tomatoes diced
  • 1 bag frozen corn

Optional Add ins

  • green beans
  • lima beans
  • any other vegetables you have!

Taco Seasoning

  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp oregano
  • 1/8 tsp cayenne pepper

Instructions

  1. Saute sweet potatoes with onion in a large pot

  2. Add in all other ingredients

  3. Cook on low for about 2 hours

  4. If using a crockpot, just add everything in and let cook on low all day
