Spinach is an awesome source for vitamins A, E, K and C. It is also a great place to find natural fiber, which can help improve digestion. Spinach is packed with antioxidants that help nourish the brain and eyes, fight acne, and prevent wrinkles!

Salmon is the protein component in this dish and can provide 19-21g of protein per 3 oz., depending on the type of salmon you use! It is also a great source of omega-3 fatty acids, which help fight inflammation and promote heart and cardiovascular health!

Mango’s are also a great source of natural fiber and they are rich in vitamin C, copper and folate. Vitamin C and copper are great immune boosters and copper also helps with iron absorption! Nutrients in mango can aid in lowering cholesterol, preventing acne and boosting brain health.

Avocados are packed with nutrients like fiber, potassium, iron, copper, and zinc! This beautiful green fruit is also a great source of healthy fats and vitamin B5, which is essential for metabolism and hormone production!

Summer Salmon Salad
Trader Joe's inspired summer salmon salad is a light and refreshing dish you can enjoy during these hot summer months!
Ingredients
- 6 oz Bag of baby spinach
- 1 Pack Salmon Trader Joe’s has different types depending on the season and store! About 3/4 lbs.
- 2 tbs Green Goddess dressing Found in the refrigerated vegetable section
- 1 whole Mango Sliced and diced
- 1 whole Avocado Cubed
- 5 oz Heavenly tomatoes Half of a 10oz bag or about 10 baby tomatoes sliced
- 1 tbs Olive Oil
- 1 tsp Salt To taste
- 1 tsp pepper To taste
- 1/4 Lemon Lemon juice To cover salmon
Instructions

Preheat the oven to 425 degrees.

Line a baking sheet with foil.

Using a paper towel, pat the salmon dry and place it on the baking sheet.

Drizzle olive oil over the salmon and apply a generous amount of salt and pepper.

Place in the oven and roast for 4-6 minutes. Salmon in done when flakey.

While the salmon roasts, toss the spinach, avocado, tomatoes, and mango in a large bowl.

Take the salmon out of the oven and squeeze about a quarter of a lemon’s juice onto it.

When ready to serve, divide salad into 2 bowls, top each with half of the salmon, and add salad dressing.
